CHICKEN MARBELLA

INGREDIENTS

4 medium bananas
4 eggs
¼ cup melted coconut oil
2 tsp pure vanilla extract
2 ¼ cups blanched almond flour
1 tsp baking soda
½ tsp baking powder
1 tsp cinnamon, nutmeg or cardamom (my personal fave)
½ tsp pink Himalayan salt
Handful of chocolate chips (optional)

DIRECTIONS

Step 1
Preheat oven to 350 degrees F and line a medium loaf pan with parchment paper.
Step 2
Mash bananas into a chunky paste with fork. Whisk in eggs, coconut oil and vanilla.
Step 3
Slowly hand-mix in all dry ingredients
Step 3
Transfer to loaf pan (and sprinkle with chocolate chips if desired). Bake for 50-60 minutes until golden brown. A toothpick or knife inserted into center should come out clean when finished. Allow to cool completely in loaf pan.

Serving Suggestion
Toast before eating and add LOTs of butter or almond butter. Serve with a fried egg or extra slices of banana, chia seeds and pecans to make this a yummy breakfast option.
