Chicken Salad with Grapes and Parsley

INGREDIENTS

½ rotisserie chicken, meat picked from bones

1 cup red grapes chopped in half

½ small red onion

¼ cup chopped celery

1 large handful parsley

½ tsp celery seed

½ tsp lemon pepper (optional)

Salt to taste

Paleo friendly mayonnaise, hummus or extra olive oil to add creaminess, ~1-2 tbsp (optional)

DIRECTIONS

Step 1

Prepare all veggies to desired texture (I like mine finely chopped) and add to large bowl with chicken.

 

 Serving Suggestion:

Serve stuffed into avocados, as a kale leaf lettuce wrap or with Mary’s Gone Super Seed Crackers (one of the few packaged foods I recommend)
