Easy Breazy Banana Pancakes
INGREDIENTS
1 large banana
2 eggs
Hefty pinch of pink Himalayan salt
½ tsp cinnamon (optional)
½ tsp pure vanilla extract
Butter
DIRECTIONS
Step 1
Heat cast iron skillet or non-stick pan/griddle. Add butter or other appropriate cooking oil.
Step 2
Mash banana into a chunky paste with fork. Whisk in eggs, salt, cinnamon etc.
Step 3
Drop batter onto heated pan and cook 1-2 minutes until golden brown on the underside. Flip pancake and cook through.
Step 4
Add butter and enjoy!
Serving Suggestion
Serve with extra butter, sliced bananas, and chopped nuts/seeds. I like chia on mine!
