Lemony Grilled Veggie Kabobs

INGREDIENTS

1 medium red onion

1 yellow crook-neck squash

1 large zucchini

1/3 cup cherry tomatoes

1/2 cup kalamata olives

2 tbsp olive oil

1/2 lemon, squeezed

salt, pepper, dried, garlic powder and oregano


DIRECTIONS

Step 1

Soak skewers in water 10-15 minutes.

Step 2
Chop all veggies into large 1 inch cubes and toss in olive oil, lemon juice, spices, salt & pepper

Step 3

Skewer veggies in colorful patterns and grill 5-7 minutes per side or until lightly browned and sizzley.


Serving Suggestion
Make a handful of marinated chicken skewers to grill with your veggies and serve over quinoa or greens.
