Roast Beef, Red Cabbage & Roasted Sunflower Seed Salad

INGREDIENTS

2 cups spring mix
½ green apple sliced
½ cup red cabbage
2-3 slices roast beef, shredded
2 TBSP roasted pumpkin seeds
Salt, pepper, garlic powder to taste
EVOO & Coconut Aminos (or balsamic vinegar)
Can add sheep/goats milk feta if dairy tolerant

DIRECTIONS

Step 1
Wash and prep all veggies to desired shape/texture (chop, dice, shred etc.)
Step 2
Dress with EVOO & coconut aminos.

Tip!
Balsamic, ACV, red wine and lemon juice would all work as substitutes for coconut aminos.
